Guest Speakers


David Lee, founder of Field Roast Grain Meat Co.


In the late 1980s, Chef David Lee decided it was time to change his path and do something good for people. He left the fine dining restaurant circuit to establish Seattle-based FareStart, a culinary job training program with the mission of serving and supporting the city's homeless and disadvantaged populations. In 1997, he established Field Roast Grain Meat Company with brother Richard Lee. Field Roast vegetarian meats quickly gained national attention and David has become recognized as a leader in the fast-growing segment of vegetarian food products. Field Roast products are now sold in grocery stores nationwide, and are widely available at restaurants, universities, and stadiums.



Howard Lyman, author of "Mad Cowboy"


Author of the best selling Mad Cowboy, and No More Bull!, Howard F. Lyman, is a fourth-generation family farmer from Montana. After 20 years of operating a feed lot, he sold his ranch and started working for farmers in financial trouble. He was a lobbyist in Washington, and ran for Congress in 1982. He is the former Director of the "Beyond Beef Campaign" & the Humane Society of the United States' "Eating With Conscience" Campaign; past President of both the International Vegetarian Union, and EarthSave International; and is currently President of Voice for a Viable Future.
